Niamh has an honours degree in Human Nutrition & Dietetics from Trinity College Dublin and is a CORU-registered dietitian and freelance consultant nutritionist with over 30 years’ experience. Her career includes clinical nutrition & dietetics in teaching hospitals and private practice, national nutrition research, EU food legislation, corporate consultancy, media work, advocacy, student training and university lecturing. Driven by an unwavering entrepreneurial spirit, she founded Cork Nutrition Consultancy™ in 1999, followed by SEDI™ (The Freelance Dietitians’ Network) in 2008, NutriCount® in 2012 and Inside Dietetics™ in 2026.
A trusted voice in the field, she is also regular contributor on radio and national print media, where her clear, evidence-based approach to nutrition has earned her wide respect.
In 2026, she was appointed to the Conduct Committee (Committee of Inquiry / Fitness to Practise hearings) of CORU, the health regulator in Ireland, and will fulfil this important statutory role for the next 5 – 10 years.
As an active member of the Irish Nutrition and Dietetic Institute, she is a passionate advocate for patients and a vocal opponent of nutrition misinformation. With social media awash in half-truths, sponsored ‘wellness’ content, and biased documentaries, she challenges myths with science and common sense in equal measure.
Niamh is an accomplished pianist (Associate of the Victoria of Music, London), loves fashion, is addicted to travelling and known to enjoy chocolate and a glass of Malbec!
